If you’re anything like me, you always end up buying too many bananas at the store, and half of them go bad before you get the chance to eat them!
I hate wasting food, so I found myself looking up banana recipes (again). I stumbled upon an amazing Banana Bread Cookie recipe that I had most of the ingredients for laying around the house already. I ended up tweaking a few ingredients to fit my liking and my lifestyle, feel free to do the same for yourself!
1/2 C Melted Coconut Butter
1/2 C Maple Syrup
1 Tsp Vanilla Extract
2 1/2 C Almond Flour (I used blended Gluten Free Oats)
1 Tsp Baking Soda
1 Tsp Cinnamon
Preheat the oven to 350. In a large mixing bowl, mix together the wet ingredients. If you need to, use a blender to help smooth the mixture. In a smaller bowl, mix together the wet ingredients. Add the dry ingredients into the wet ingredients and mix well together.
Line a baking sheet with parchment paper. Scoop out desired cookie size, they will grow! Bake for 10-15 minutes or until golden brown.
This recipe should make about 12-15 cookies! Enjoy!
