Healthy, Delicious Chocolate Chip Cookies

Wow! I am actually amazed at how easy (and healthy) baking chocolate chip cookies can be! Spare yourself the shortening, all-purpose flour and sugar. We won’t be needing those for this recipe!


All you’ll need are whole, natural ingredients that will do wonders for your body AND your tastebuds. I’m not sure about you, but that’s a huge win in our house!


These cookies turned out fluffy, thick and full of flavor! I was able to get 12 medium-sized cookies with this recipe. If you’re looking for more, I would double the recipe or just make your cookies a little smaller!


Ingredients:

  1. 2 C Almond Flour

  2. 1 Tsp Baking Soda

  3. 1/4 Tsp Salt (I just used a dash!)

  4. 2 Eggs

  5. 6 Tbsp Melted Coconut Oil

  6. 1/4 C Pure Maple Syrup

  7. 1/4 Water

  8. 1 Tsp Vanilla Extract

  9. As many chocolate chips as your little heart desires!


Instructions:

Preheat oven to 350 degrees. Mix together the dry ingredients (flour, baking soda and salt) in a small mixing bowl and set aside. In a large bowl, mix together the wet ingredients (2 eggs, melted coconut oil, pure maple syrup, water, vanilla extract). Once you have fully mixed the wet ingredients together, slowly add the dry ingredients into the wet ingredients. I always do a little at a time to prevent the dough from clumping.

Once everything is mixed, add the chocolate chips!

Line your baking sheet with parchment paper and scoop out desired cookie sizes using a spoon. Bake in the oven for 10-12 minutes. If you’re making smaller cookies, be sure to check on them a little sooner so they don’t burn! That’s it! Easy, peasy! Enjoy!
