
Get your belly ready for a delicious, healthy breakfast bowl that will have your tastebuds thanking you! I love this because it’s a perfect for a lazy Saturday morning, or to prep ahead of time and take with you on the go!
All you need is a sweet potato, two eggs (or more), an avocado and your choice of spices for a little extra flavor!
Here are the steps I took:
Preheat oven to 425 degrees
Rinse and dice sweet potato into bite size pieces
Place diced sweet potato onto a baking sheet lined with foil
Lightly oil (I just use olive oil spray) and season the sweet potatoes (I used black pepper and garlic powder)
Cook sweet potato for 15 minutes, toss, and cook for another 15 minutes
While the sweet potatoes are finishing, slice an avocado and begin to cook your eggs (I cooked mine over-hard)
Add sweet potato, egg and avocado to a bowl
Sprinkle your choice of seasoning on top (I did red pepper flakes and black pepper for an extra kick)
Of course, there are many ways to make this meal your own! Next time, I’ll be adding some onions and peppers to my eggs!
